Are you the person who is running from work, to the gym, to time with the kids and all your other extra curricular activities? If so, it’s hard to add the cooking time in your schedule to make sure your diet is on point. Sometimes it just seems impossible to get those 5 to 6 healthy meals in every day. Yes, I said 5 to 6 healthy meals every day. You’ve got to eat 5 to 6 times per day to keep that metabolism going. Now mind you, these are small portion, healthy meals, but it sure does the trick instead of feeling like you’re starving all the time. There are recipes that work great for those people on the go.
I market for a living, so I am in the car all day long and many times don’t have the option to heat up my food. Straight from work I head to my Texans Cheerleading practice, so I have to pack my food for the entire day. I found that foods that taste good hot or cold worked best for me, for when I don’t have a microwave to heat up my food. I have learned that it’s best for me to pack my foods in a small cooler in my car, that way I make better choices. And trust me when living in Houston, Texas in the summer you have to make sure to add a lot of ice packages to keep your foods nice and cool. For you individuals that are on the go, packing your food is not only more money savvy, but more time efficient because you don’t have to leave work to grab food at a restaurant. Also, when buying fast foods, you never know how the foods are cooked and what the portion sizes are, so this way you know exactly what is in your food and you know how much you should consume.
My favorite on the go, good hot or cold food is Oatmeal Pancakes! They take less than 15 minutes to make a batch for the entire week; you can keep them in the refrigerator and heat them up or just eat them cold. If you don’t like them plain you can add sugar free jelly, all-natural peanut butter, sugar free syrup, or agave nectar. I talk to people all day long that say, I just don’t have time to get 5 or 6 meals in a day…this is just an excuse you are making for yourself! These recipes take 15 minutes or less one time a week and you can snack on them for multiple meals a day, so get started today!
And as a side note, my father won’t eat anything healthy and he enjoys these Pancakes! So at least give them a shot!
Oatmeal Pancake Recipe:
This is for a smaller serving, so when you are making multiple batches double or triple the recipe.
¾ Cup Old Fashion Oat Meal
3 Egg whites
½ Banana
½ Tsp Cinnamon
1 Packet of Splenda
Splash of Vanilla
- Add all the ingredients in blender. Blend until smooth.
- Heat stove and spray pan with cooking spray.
- In skillet pour mixture into small circles. Make the pancakes to your liking. I like mine thicker and a little mushy, but some of my friends like them liner and cooked all the way through.
